The Campus Kitchens Project And Sodexo Create Nutrition Education Curriculum For Children

The Campus Kitchens Project, in partnership with Sodexo, has developed a nutrition education curriculum to empower kids to make healthier food choices and teach them how to prepare nutritious meals at home.

“We know we can’t end hunger with food alone,” said Laura Toscano, director of The Campus Kitchens Project. “So our student leaders develop innovative programs every day that will address the underlying root causes of hunger. This curriculum captures some of the best practices in nutrition education from Campus Kitchens across the country.”

The curriculum, which is available on The Campus Kitchens Project’s website, features six lessons inspired by the United States Department of Agriculture’s MyPlate food guidance system, and aims to educate children on healthy components of a balanced meal. Each lesson includes a preparation and materials section in addition to the core content, which itself is comprised of introductory, concept and food, and wrap up activities. In addition, each lesson is followed by a take home recipe that underscores concepts taught. The curriculum is intended for children age six to 12.
